You will do bit less damage, but the difference is not that huge. I'd rather take the melee stats and attunement slots than the 100-200 damage more on my forbidden sun. What really makes pyro go is the strength of your pyromancy flame and you have a decision here too. If you prefer to use the Ring of Binding and stay hollow then you want the Dark Pyromancy Flame to get your Fire Seed. Otherwise you want the regular pyromancy flame to get them.
