It's really simple. Pick the weapons you want to use. The Greatsword is a good one just because it has low requirements and awesome damage. I'd go Smelter swords for the crazy L2 though. Pick whatever armor you want to use. It's just for fashion. Probably not the absolute heaviest armor though. Get enough str and dex to powerstance your weapons.
Scaling on DS2 is quite bad, you would have better gain infusing it with lightning as most enemies are kinda weak to it ... If you're gonna use ultra greatswords you need to go 2H.
